General Tso's Chicken

This is supposed to be a lighter version of regular general tso's that I got from Martha Stewart. I ate this with quinoa instead of rice.

Ingredients:
1/4 c cornstarch
1 lb snow peas, trimmed and halved crosswise
4 garlic cloves, sliced
2 tsp fresh ginger, grated and peeled
3 tbsp light brown sugar
2 tbsp soy sauce
1/2 tsp red pepper flakes (makes it decently spicy)
2 large egg whites
salt and pepper
1 lb boneless, skinless chicken breasts cut into chunks
2 tbsp vegetable oil

Directions:
1. Stir together 1 tbsp cornstarch and 1/2 c cold water until smooth. Add garlic, ginger, sugar, soy sauce, red pepper flakes and snow peas and toss to combine and set aside.
2. In another bowl, whisk together egg whites and 3 tbsp cornstarch, salt and pepper. Add chicken and toss to coat.
3. In a large nonstick skillet, heat oil over medium heat. Add chicken, shaking off the excess egg-white mixture. (can do this in 2 batches depending on size of pan) Cook, turning occasionally 6-8 minutes until golden and cooked through. Transfer to a plate and set aside.
4. Add snow pea mixture to skillet. Cover and cook until snow peas are tender and sauce has thickened, 3-5 min. Add chicken back in and toss to coat.

Easy Cheesy Crockpot Chicken

2 lbs. boneless, skinless chicken breasts
1 can condensed cheddar cheese soup
2 cans condensed cream of chicken soup
1/4 tsp garlic powder

1. Place chicken into crockpot.
2. Mix the undiluted soups with the garlic powder and pour over chicken.
3. Cover and cook on low for 6-8 hours
4. Serve with rice or noodles.

Baked Haddock

I left out the thyme because I didn't have any and it was still good.

3/4 cup milk
2 tsp salt
3/4 cup bread crumbs
1/4 cup grated Parmesan cheese
1/4 tsp ground dried thyme
4 haddock fillets
1/4 cup butter, melted

1. Preheat oven to 500 degrees.
2. In a bowl, combine the milk and salt, and in a separate bowl mix together the bread crumbs, parmesan cheese, and thyme.
3. Dip the haddock fillets in the milk, then place in the crumb mixture.
4. Place in a glass baking dish, and drizzle with the melted butter.
5. Bake on the top rack for about 15 minutes.
